New Recipe

I know all of my other posts have been about Logan, so I figured for once I might post something different. I actually tried out a new recipe this last week and we thought it was really good. Even more important, it was really easy. So, I thought I would put it out there in case anyone might like to try a new dish.


6 pork chops (I actually only used 4)
1 T. vegetable oil
1 30 oz package frozen shredded hash browns (thawed)
1 1/2 cups shredded cheddar cheese
1 can cream of celery soup
1/2 cup milk
1/2 cup sour cream
1/2 tsp seasoned salt
1/8 tsp pepper
1 can French fried onions

In a large skillet, brown pork chops in oil on both sides; set aside and keep warm. In a bowl, combine the hash browns, 1 cup shredded cheese, soup, milk, sour cream, seasoned salt, and pepper. Stir in half of the onions. Transfer potato mixture to a greased slowcooker. Then place pork chops on top. Cover and cook on high for 2 1/2 - 3 hours or until meat juices run clear. Sprinkle with remaining cheese and onions. Cover and cook an additional 10 minutes longer or until cheese is melted.

Anyway, Brian and I really enjoyed this dish. I served it with some boiled okra and bread. The best part was how easy it is.

Happy Valentines Day!

Happy Valentines Day everyone! Really there wasn't anything exciting going on for us. Brian was on call today so Logan, Murphy and myself just spent some quality time together. Logan did get a little Valentines Day care package from her Mimi & Grandad. In it was a stuffed dog and she absolutely loved it. I was actually surprised. She gripped a rattle for the first time this week so I wasn't really expecting much. She did however get a grip on this little dog and it looked like she was loving kissing on it. It was really so cute. So, of course I got a few pictures of it. She also had her first play-date yesterday, which of course was a little Valentines Day party. So, that was fun as well.

The Hair is Growing!

To those who don't see her might not be able to tell. However I know that Logan's hair is getting longer. This was the first week I could actually get a hair bow clip to stay in (trust me, I try often). Of course, Brian isn't nearly as fond of the bows as I am. He better just get used to it because that just comes with little girls. Fortunately, I dress her most of the time so I get to choose. I will let you all be the judge...don't you think these pictures show that it is growing?!?!
